Fiesta Lime Salsa


I love how this salsa turned out. If anything looks like a party, I am in and this salsa most definitely looked like a party. It was delish and fresh and zesty. Loved it on chips but would be great on chicken or tacos or anything your little heart desires. I personally enjoyed the fight to the bottom of the bag with my husband. He won. He always wins at the chip game.

We are growing some green and yellow tomatoes in our yard but came home to a bag of romas and cucumbers on our porch this weekend. Thanks Brooke and Toby! The cucumbers will meet their destiny later this week but I sure loved those romas. I have a few left so I will think of something fun for them later as well. You have to treat donated produce with love. :)

5 cups diced tomatoes in all colors - I used roma, green grape, yellow pear and another golden one that I can't remember the name of.
1 sm red onion
1/2 cup chopped cilantro
1 Serrano pepper, seeds in
1 tsp. lime zest
1/4 cup lime juice
2 cloves minced garlic
1 tsp salt or more to taste
Mix it all up and enjoy. No need to be dead on with the ingredients. Just do what tastes good to you. Add things in if you like. Have fun with it.
