Roasted Zucchini, Tomato and Goat Cheese Flatbread


Oooh I love that stinky cheese. I know that doesn't sound appetizing but that's just how a feel about goat cheese and to be honest, I consider that a downright compliment to the goat. I love the stuff. And it's stinky. It just adds a little SHEZAM to whatever it is on. As mentioned before, our friends dropped off a bag of romas and cucumbers the other night. I used the rest of the romas in this recipe. It was quite tasty if I do say so myself. And crazy easy to make. Even easier to eat.

1 ball of prepared pizza dough from grocery store or pizzaria
3 roma tomatoes, thinly sliced
1 zucchini, thinly sliced
1/2 cup of goat cheese
Olive oil
Sea salt

Preheat oven to 450ยช
Roll out dough on floured surface into about a 12X12 circle/square
Place on parchment covered cookie sheet
Poke dough a few times with a fork
Drizzle a little olive oil on the surface to help it crisp up
Crumble and spread goat cheese evenly over surface
Layer zucchinis and tomatoes on top of flatbread
Drizzle olive oil over the veggies
Sprinkle with a touch of sea salt

Bake for 20-25 minutes, until crust is golden brown and zucchinis are caramelized. Mmmmm. Dig in.

I am so glad that our tomatoes have gone to good use! If for any reason you need more come steal them from our garden this week. We arent going to be in town and I don't want them to go bad!
